Protein Pancakes with Blueberries and Low Fat Yoghurt

Ingredients

50g of whey protein powder
2 egg whites
30g Oats
Half a tsp baking powder
100ml skimmed milk
60g blueberries
60g low fat yoghurt
1tsp honey

Method

•  Whisk the protein powder, baking powder, egg whites and milk together. Now add the oats and leave to stand for ten minutes.

•  Heat a non-stick frying pan on a low heat and add a spray of fry light. Add the pancake mix until it just covers the base of the pan. Cook for roughly 2 minutes and flip and cook for a further 2 minutes.

•  Mix the blueberries and yoghurt together with the honey. Add to the golden pancakes and enjoy. This recipe should make 4-5 pancakes.
